But before you move into the methods/processes you need to get these ingredients on your cooking table.

Required Ingredients

  • Sweet potatoes (2kg /4 Lbs)
  • Butter (3/4 or 1/2 cup)
  • Light Corn Syrup ( 1 whole and 1/4 cups)
  • Honey (1/4 cup)
  • Vanilla( 2 tablespoons full)
  • Candied Sauce (1 cup)
  • Light brown sugar ( 2 tablespoons full ) for Garnishing
  • Cinnamon Powder ( 1 Tablespoon)
  • Nutmeg (1/4 Teaspoon )
  • Salt ( 1/4 teaspoon)

Step by step method on preparing Patti Labelle Yams:

  1. Take a pot big enough to hold all the potatoes (2kg) taken for this recipe. Next, wash each of the potatoes readily(make sure it is free from any sort of mud). Now, take water in the pot such that all the potatoes taken for this recipe are completely submerged. Boil it till they get tender(make sure they don’t get mushy). Parallelly prepare the candied sauce when you successfully leave the potatoes to boil.
  2. Get a baking dish for storing candied sauce later on. Now get a saucepan, and put the butter in it with low heat, and let it melt. Meanwhile, add 1 whole cup of brown sugar to the melting butter and keep on stirring it. It will appear to be a tick past in the beginning.
  3. Now it’s time to add salt, light corn syrup, nutmeg, honey, vanilla, and cinnamon powder to the sugar and butter mix you have prepared earlier. Keep on stirring until a smooth texture appears that exhibits medium liquid consistent composition. Make sure that this paste is sufficient to coat each of the potatoes taken for this recipe.
  4. Once done, move your focus towards the potatoes you left for boiling by keeping this candied sauce aside. Now scoop the potatoes out of the hot boiling water with the help of tongs or a spoon.
  5. Take a bowl and get it filled with cold water and put the potatoes in it and let them cool f0r 12-15 minutes. Meanwhile fix the oven to preheating at a 350 F
  6. With the help of a peeler, peel out the outer layer of potato and cut them in a circular shape of 1/4 volume. However, you can choose other shapes which you desire to cut it. To taste better it is recommended to give a smooth thinner cut which in fact increases the absorbing capacity of the potatoes and thus can give you enhanced taste.
  7. Transfer all those potato slices to the baking dish which you kept earlier and put the candied sauce on the potato over there. Mix each of the potatoes with the candied sauce such that there exists an even composition. Additionally, add 2 tablespoons of brown sugar onto the potatoes.
  8. Now transfer it into the oven and leave it for 30mins for baking. Although you must keep a regular check into the dish every 12-15 mins and give a slight mixing for better taste. Once it’s baked completely, apply caramel sauce on the top. For enhancing the taste further, adding Vanilla Ice Cream won’t be a bad choice.
